It all begins in the forests of the Jura, where we carefully select the finest hornbeams, prized for their exceptional density, superior to that of oak. Then it's a story of know-how and tradition, preserved in our workshops for over a century. We work with "end grain" wood, sawn perpendicular to the trunk fibers, as if it were cut into thin slices. The resulting cobblestones are meticulously assembled one by one to create a unique cutting board.
