It all begins in the forests of the Jura, where we carefully select the most beautiful hornbeams, prized for their exceptional density, superior to that of oak. It is then a story of know-how and tradition, preserved in our workshops for more than a century. We work with the so-called "end grain" wood, which comes from sawing perpendicular to the fibers of the trunk, as if it were cut into thin slices. The resulting blocks are meticulously assembled one by one to create a unique cutting board.
